Once a qualified professional has connected the grill to a properly sized gas line, fuel is available whenever the grill is in service. A natural gas grill can run for hours, day after day, without the owner managing a finite onboard supply.

Dense lump charcoal can offer a similar range, though its irregular pieces make runtime less predictable. In a ceramic kamado cooker, charcoal can hold a controlled low temperature for eight to 15 hours, and sometimes longer, because the insulated body uses fuel exceptionally efficiently.

That makes charcoal the endurance choice for ribs, pork shoulder, brisket, and other cooks that reward patience. Propane suits the owner who values placement flexibility and clean, responsive control. Charcoal rewards the enthusiast who regards fire management as part of the craft. Pellets serve the host who wants consistent smoke flavor without standing watch over the coals.

It is also worth considering a dual-fuel approach. A high-performance gas grill can handle cocktails-to-dinner service with speed and precision, while a charcoal grill, kamado, or pellet cooker takes responsibility for weekend smoking and more ceremonial meals.
